Kashar Unit

Cheddar cheese production unit is a production line that is usually located in milk processing facilities and is specially designed for the production of kashar cheese. This unit includes the processes starting from the processing of milk to the maturation of kashar cheese.

Cheddar Cheese Production Unit Components

Milk Receiving and Storage: Milk is supplied to the unit from various sources (farms, milk collection centres). Large storage tanks allow temporary storage of milk.

Milk Processing and Standardization: Milk is processed to standardize its fat and solids content. This step is important to ensure consistent product quality.

Whey Separation: Milk is separated into whey (serum) and cheese mass during cheese production. The whey is separated to be used for other products.

Coagulation and Cutting : Milk is coagulated with appropriate enzymes and starter cultures. Next, the cheese mass is cut and separated with whey.

Heat Treatment (Paste Filtration): The cheese mass is heated and stirred to separate the whey to increase the density of the cheese.
